Chewy Chocolatey Brownies

Ingredients

1 gram
RSO
1 cup
unsalted butter
1 tbsp
canola oil
1/2 cup + 1 tbsp
white sugar
1/2 cup + 1 tbsp
brown sugar
2
large eggs
2 tsp
vanilla extract
1/2 cup
all-purpose flower
1 1/2 cup + 1 tbps
unsweetened cocoa powder
1/4 tsp
salt
1 cup
chocolate chips
1 bar
baking chocolate, cut into chunks
2 tsp
finely ground coffee
1 cup
mini marshmallows (optional)

Process

Preheat the oven to 350°

Warm the RSO in a bowl of hot water.

In a separate bowl melt the cup of butter, getting it HOT. Add the RSO & whisk it vigorously, mixing until fully incorporated. Then add the canola oil, white + brown sugar, & butter mixture & stir for 2 minutes, before mixing in the eggs & vanilla.

In a separate bowl, mix the flour, cocoa powder, salt, chocolate, & coffee together. Fold it into the butter mix, stirring as little as possible for extra fudgy brownies.

Grease a 9x9 baking pan, then plop your brownie mixture into it, smoothing it out. Bake for 20 minutes, or until it no longer jiggles in the center. Sprinkle the marshmallows evenly on top (if using them), & return to oven until they're golden.

Let the brownies fully cool, then cut into individual pieces, & enjoy!
